The Bandera County Chamber of Commerce joined Hunt Brothers Pizza and the Texas Hill Country Resort to celebrate the pizza franchise’s grand opening on the morning of July 3 in Medina.
The ribbon-cutting ceremony marked the start of a new partnership between the two businesses and was met with smiles and excitement as free pizza samples were handed out throughout the day.
“We just felt that something was needed out here,” said Allix Eckermann, national operations manager for parent company Investorade. “The nearest town is Kerrville, and it takes about 25–30 minutes to get there. We just wanted to provide something our guests can get here.”
Eckermann said the convenience of on-site food is especially helpful for guests arriving with RVs.
“Sometimes when people come out here with an RV, it can be hard to maneuver these winding roads. You don’t want them in and out, or to unhook their vehicle. Or maybe you just spent six hours traveling to this park—you don’t want to leave again to go get food,” she said.
The new Hunt Brothers Pizza storefront, located at the Hill Country Resort’s front office building, will serve signature and custom pizzas, as well as wings. But Eckermann said they have bigger plans.
“Our plans are to have this store fully functioning, having more in the kitchen— not just pizza. The beer garden here, it’s a wonderful outdoor area to have music, play pool and shuffleboard,” she said. “I want this to be a community hangout spot— not just for people staying here. We wanted something local and convenient.”
The Texas Hill Country Resort markets itself as a relaxing getaway for couples, families and friends. Accommodations include cabins, bunkhouses, tent sites and an RV park.
“For a family getaway, the Ranch House is absolutely stunning,” Eckermann said. “It’s got a lot of history to it. There are separate suites, so at the end of the day, if you need some time away from one another, you can space out. The back porch really just seals the deal for me—tons of rocking chairs where you can enjoy nature and the company.”
The Ranch House has hosted historical figures such as President Lyndon B. Johnson, who would visit to relax, listen to music, drink and gamble. Businessman William Lewis Moody Jr. also contributed to the house’s original assembly.
Eckermann said the resort’s two observation decks offer scenic views and are part of a push to get young visitors exploring the property.
“We have them at different levels, and the hike up there is gorgeous—you can see for miles and miles,” she said. “We’re doing something new called ‘Painted Rocks.’ We do hunting hikes to inspire kids to get out there and enjoy the outdoors.”
